flour water salt bakery is a family owned business belonging to Joost & Kirsty Hilkemeijer operating bakery cafes in the charming seaside villages Milton, Kiama and Huskisson. Our wholesale bakery is located in the beautiful town of Berry.
We believe you don’t have to do a million things, just a few and do those few right. We don’t offer countless types of breads, cakes or sandwich varieties, just a few that we think are delicious and we hope that you will think so too.
At the heart of our business is artisan sourdough. The name says it all – our bread only contains three ingredients – organic flour, purified water and Australian sea salt. Our organic bread is authentic sourdough as we use a natural leaven. We don’t add baker’s yeast, or anything else you wouldn’t expect – we believe good bread should be made using the purest of ingredients.
We keep it traditional – our artisan bakers cut no corners when it comes to their method: Shaped and moulded by hand, our breads are left to rise for hours in willow baskets and baked to produce authentic European handcrafted sourdough.
In our bakery cafes
We believe in using the best ingredients available to us – no shortcuts. We source products from suppliers that are like minded and respect their product and take pride in what they are doing. Where we can, we use organic and local ingredients, and sometimes we are even lucky enough to be given home grown produce from customers, whether that be a laden fruit tree or herb garden. We respect the seasons and what the farmer has in abundance, we turn into delicious jams and preserves (It's Kirsty's favourite thing to do - all our jams in store are made by Kirsty - hand stirred, small batch, seasonal fruit).

flour water salt is the off spring of Joost Hilkemeijer and his wife Kirsty. Joost started Berry Organic Sourdough Bakery in 2002 and is the name of our wholesale business – stocking cafes, restaurants and shops as far south as Bega, north to Southern Sydney and Canberra. Joost has carved a spot for himself as one of the best bakers in Australia. He’s obsessed with baking the perfect loaf of bread and his passion and commitment comes through in every loaf he bakes. Near-enough is never good enough. And his customers appreciate every perfect mouthful of his authentic artisan bread.
